Packed with nutrients, beans are an excellent source of protein, fiber, vitamins A,C&E, and minerals.  They can be enjoyed at different stages of growth. When young and tender, the entire pod can be cooked and eaten, similar to snap peas. As the beans mature, the pods become tougher and less palatable, but the individual beans inside can be shelled and cooked separately.
